Five reasons to grab a plate this Winter

Holiday cheer is in the air, so as the enjoyment of winter drinks and snacks spread throughout Liberty. Christmas lights, decorated pine trees and mistletoe surrounds the town, along with popular, edible traditions. Here is a list of the top most popular Christmas foods and drinks with some simple recipes!

1. Apple Cider:

  • 1 (64 fluid ounce) bottle apple cider
  • 3 cinnamon sticks
  • 1 teaspoon whole allspice
  • 1 teaspoon whole clove
  • 1/3 cup brown sugar

In a slow cooker, combine apple cider and cinnamon sticks. Wrap allspice and cloves in a small piece of cheesecloth, and add to pot. Stir in brown sugar. Bring to a boil over high heat. Reduce heat, and keep warm.

2. Egg Nog:

  • 2 eggs, beaten
  • 3 tablespoons sugar
  • 2 1/3 cups low-fat milk
  • 1 teaspoon vanilla extract
  • 1 dash ground nutmeg

Blend together eggs, sugar, milk, vanilla and nutmeg. Serve chilled.

3. Leg of a Lamb:

  • 1 (4 pound) leg of lamb, deboned and tied
  • 1 tablespoon ground black pepper
  • 1 teaspoon salt
  • 5 cloves garlic, cut into slivers
  • 2 sprigs fresh rosemary
  • 1 (15 ounce) can tomato sauce

Preheat the oven to 375 degrees F (190 degrees C).

Rub the leg of lamb all over with salt and pepper. Use a small knife to make punctures in the lamb about 1 inch apart. Press slivers of garlic into each hole so that they are about 1/2 inch below the surface. Pour the can of tomato sauce over the whole thing.

Bake for 45 minutes in the preheated oven, then lower the temperature to 325 degrees F (160 degrees C), and continue roasting until the internal temperature of the meat is at least 160 degrees F (70 degrees C), about 15 minutes. Wait until the internal temperature reaches 170 degrees F (75 degrees C).

4. Roasted Turkey:

  • 1 (12 pound) whole turkey
  • 3/4 cup olive oil
  • 2 tablespoons garlic powder
  • 2 teaspoons dried basil
  • 1 teaspoon ground sage
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups water

Preheat oven to 325 degrees F (165 degrees C). Clean turkey (discard giblets and organs), and place in a roasting pan with a lid.

In a small bowl, combine olive oil, garlic powder, dried basil, ground sage, salt, and black pepper. Using a basting brush, apply the mixture to the outside of the uncooked turkey. Pour water into the bottom of the roasting pan, and cover.

Bake for 3 to 3 1/2 hours, or until the internal temperature of the thickest part of the thigh measures 180 degrees F (82 degrees C). Remove bird from oven, and allow to stand for about 30 minutes before carving.

5. Turkey Stuffing:

  • 6 ounces dry bread stuffing mix
  • 10 slices day-old bread, torn into small pieces
  • 3 eggs, beaten
  • 1/2 cup water

Preheat oven to 350 degrees F (175 degrees C). Butter or spray one 2 quart casserole dish.

Prepare stuffing according to directions on box; place stuffing in a large bowl.

Add the dried bread, eggs and water; mix well and place in casserole dish.

Cover and bake 45 to 60 minutes.
